I am excited to announce that for the first Güd Güd pop-up in NYC in collaboration with Baan!
My friend Brendan of Baan and I will be cooking a 5-course Korean and Thai inspired dinner at Ostudio in Brooklyn on Friday, September 10th and Sunday, September 11th!
We are taking many of our favorite elements of our home cuisines to bring Brooklyn a very fun menu. Brendan used to work in professional kitchens in Thailand before transitioning into strategy work and is based in Manhattan. He was trained up at Bo.lan, a well-respected Thai fine dining establishment in Bangkok, and was raised eating Thai and Malaysian food growing up.
We met when I was helping with a mutual friend’s pop up and after a few months of talking about collaborating on a pop-up we are finally live!
After a few R&D workshops we quickly realized how fun and delicious it was to create a menu that highlights elements of thai and korean cuisine that we both love.
The dinner will be a fixed 5-course dinner for $80 a person.
We were deliberating between doing a la carte vs a small tasting menu and we decided to do a coursed out dinner so that we could be incredibly intentional with what was going on, how everything would be plated, minimizing food waste, and to make sure everything we put out will be to our standard.
Our menu consists of:
Naam Prik Dang served with seasonal vegetables.
This dish is a take on a northern thai dish that consists of grilled shallots, green chilis, and garlic. Pounded into a paste with grilled oyster mushrooms and gochujjang to add depth.
Acorn Jelly with heirloom tomatoes.
Growing up my mom would make a salad that sat on top of a massive slab of cold acorn jelly as a summer snack. This will be our take on it serving it with local tomatoes and packed with Korean and Thai herbs.
Green Curry with beef shank and rice cakes served with sticky rice.
Brendan spent many many hours pounding fresh green curry paste at Bo.lan. When we were R&Ding for this menu we wanted to have a strong curry dish. We are smashing our own paste with shallots, garlic, shrimp paste, coriander roots, and a spice blend that will be served with coconut cream braised beef shank and Korean rice cakes, all with a side of sticky rice. We all love carb-on-carb action.
Grilled Pork Belly Ssam with a grilled ginger Naam Phrik Khing.
This will be a take on a northern Thai grilled ginger “sauce” with pork belly that was inspired by Korean bo ssam. We will serve it with a few servings of perilla leaves and pickled daikon because grilled meats deserve to rest in a bed of greens.
Black Sesame Custard with chili peanut candy, toasted soybean mochi, lemongrass and makrut coconut cream, and jack fruit.
Our friend Mei Lin has jumped into the crew and has brought an incredible dessert to finish the night. Mei Lin cooked for many many years in kitchens around NYC and we were stoked when Mei wanted to jump on board with us.
This dessert… is incredible. Without exaggeration a perfect blend of flavors and textures from east and southeast Asia.
Unfortunately, we cannot accommodate most dietary restrictions. The menu will contain pork, beef, shrimp paste, fish sauce, and some nightshades. However, the menu will be dairy and gluten-free!

We’re excited to be working with Ostudio especially since they have been hosting incredible chefs for their own pop-ups and were honored to be in the mix with them. Fernando Aciar is the ex-chef and now artist that founded Ostudio. He has personally hand-made every plate that we will be using to serve the dishes.
Ostudio is an up-and-coming wine bar nestled right in between Bedstuy and Bushwick. They’ve got a strong wine list that will be available to order along with our dinner!

Since these plates are hand-made (actually inside Ostudio in their actual studio within the space), we decided to make the dinner a coursed out family-style dinner. Every pair of guests will be presented a plate that they will share together.
Growing up Asian American means everything. Everything. Is family style. Our food is meant to be eaten not only as an individual experience but as a shared one.
